Job summary

ICC Sydney is seeking a Senior Sous Chef - Production & Cutaway to lead high-volume culinary production across ICC Sydney and The Cutaway. You will develop the kitchen brigade, ensure food quality and safety, and support production planning for diverse events.

You will provide visible leadership, coach chefs, and drive continuous improvement in operations, while upholding presentation standards and event timelines.

Qualifications

• Demonstrated experience leading high-volume culinary production in large venues or hotels.
• Proven ability to coach and develop a diverse kitchen team in a fast-paced environment.
• Strong knowledge of food safety, HACCP principles and safe kitchen operations.

Responsibilities

• Lead culinary production across ICC Sydney and The Cutaway to meet schedules and event timelines.
• Provide day-to-day leadership, set expectations, and maintain a positive kitchen culture.
• Coach and develop Sous Chefs and junior staff through feedback and on-the-job training.
• Drive continuous improvement in production planning, labour management and quality.
