Job summary

Gemelli Group is seeking a Multi-Venue Restaurant Operations Manager to lead multiple venues on the Gold Coast and Brisbane, focusing on front-of-house service delivery, coaching, and operational consistency. You’ll work closely with senior management, spend significant time on the floor during peak services, and drive guest experience and team performance across venues.

Qualifications

• Minimum 2 years' experience in a multi-venue restaurant operations role.
• Experience in premium casual dining or high-volume à la carte.
• Strong front-of-house service knowledge and guest experience.
• Experience leading Restaurant Managers and front-of-house teams.
• Commercial understanding of labour management, budgeting and KPIs.
• Excellent communication and organisational skills.
• Ability to lead from the floor during busy services.
• Full, unrestricted working rights in Australia.
• Driver's licence and reliable transport.
• Ability to work evenings, weekends and peak periods.

Responsibilities

• Maintain exceptional front-of-house service standards across all venues.
• Be actively present during busy restaurant services, supporting teams.
• Ensure high guest experience and service delivery.
• Identify opportunities to improve service efficiency and operations.
• Monitor and improve service procedures and standards.
• Manage guest feedback and service recovery.
• Conduct regular venue inspections and service assessments.
• Ensure policies and standards are implemented.
• Develop and coach Restaurant Managers and front-of-house teams.
• Support recruitment, onboarding and performance management.
• Build a high-performing team culture.
• Develop management teams capable of operating independently.
• Address performance issues and corrective action.
• Monitor venue performance against revenue, labour and KPIs.
• Collaborate to improve labour efficiency and rostering.
• Review KPIs and implement improvements.
• Identify cost-control opportunities without compromising service.
• Support group-wide initiatives and procedures.
• Provide updates and recommendations to senior management.
• Assist in profitability and long-term performance strategies.
