ICC Sydney is seeking a motivated Sous Chef - Production to lead our world-class Production kitchen across ICC Sydney and The Cutaway, driving excellence in food preparation for high‑volume events. You will supervise chefs of all levels, uphold ISO 22000 and brand standards, and ensure consistent delivery of exceptional guest experiences.

Qualifications

• Experience in a similar role within a high-volume environment.
• Certificate III in Commercial Cookery is required.
• Current working knowledge of the hospitality, convention and exhibition industries.
• Ability to communicate clearly and concisely.

Responsibilities

• Lead and oversee team management within the Production kitchen.
• Deliver high-standard event meal preparation and manage multiple sections.
• Assist with rosters, scheduling and food preparation to world-class standards.
• Ensure food safety standards, HACCP compliance and brand guidelines are maintained.
• Embrace our Feeding Your Performance philosophy with fresh, seasonal produce.
• Lead, motivate and engage team to sustain a high-performance culture.
• Manage day-to-day Operations of the Production kitchen, including cost awareness.
