Job summary

Pegasus Leisure Group is seeking a Pastry Commis Chef for its South East Melbourne venues. This casual role offers potential progression to full-time for the right candidate, across a fast-paced, hands-on kitchen team focused on delivering high-quality desserts.

You will prepare and produce dessert items, assist with dessert development across venues, and support senior chefs during busy services while maintaining food safety and workshop organization.

Qualifications

• Certificate III in Patisserie (or equivalent).
• Food Allergens and Do Food Safely Certificate.
• Experience in a busy pub, bistro or high-volume kitchen.
• Solid understanding of basic cooking methods and how to execute a recipe properly.
• Willingness to work a rotating roster including nights, weekends and public holidays.

Responsibilities

• Preparing and producing dessert menu items to high-quality standards.
• Supporting the development and delivery of dessert offerings across venues.
• Jumping in to support senior chefs with prep, plating and service when busy.
• Managing your section effectively and keeping workstation organized and service-ready.

Job description

We're looking for an experienced and motivated Pastry Commis Chef to join our kitchen teams across our South East Melbourne venues. This is an exciting opportunity for a qualified pastry chef who is passionate about creating quality desserts and wants to help bring our dessert range to life across our venues.

This role is offered on a casual basis, with the potential for a full-time opportunity for the right candidate. If you're passionate about pastry, enjoy working with a great team, and love creating desserts that leave a lasting impression, we'd like to hear from you.

You'll work alongside a supportive kitchen team who take pride in delivering quality food experiences across our venues. From preparing components and creating desserts to supporting service, this is a hands-on role where you'll have the opportunity to showcase your skills and contribute ideas to our evolving dessert offering.

About Us

Pegasus Leisure Group (PLG) is the hospitality arm of the Melbourne Racing Club, managing a growing network of 16 pubs, clubs and hospitality venues across Victoria. Our venues include bistros, sports bars, function spaces and gaming areas, each focused on delivering great hospitality experiences within their local communities.

What You'll Be Doing In The Kitchen

• Keeping food safety and hygiene locked in at all times (non-negotiable)
