Job summary

Hamilton Island Enterprises’ Bob's Bakery on Hamilton Island is seeking an experienced Baker for night production, baking yeast breads, sourdough, croissants and danishes from scratch. Shift starts around 4pm and runs to midnight–3am; you will work with the bakery team to meet daily trade while maintaining quality and food safety standards.

Certificate III in Bakery is essential, along with a valid driver’s license, strong time management, and the ability to work in a busy, high-volume island

Qualifications

• Certificate III in Bakery or equivalent trade qualification (Essential)
• Valid Driver's Licence (Essential)
• Proven experience producing yeast-risen breads and sourdough from scratch
• Demonstrated experience making croissants and danishes from scratch
• Strong understanding of dough preparation, fermentation and bakery production
• Ability to work efficiently within a busy, high-volume bakery environment
• Must be available to work night shifts starting around 4pm and finishing between midnight and 3am

Responsibilities

• Hands-on across nightly bakery production, preparing and baking yeast-risen breads, sourdough and a range of pastries for the following day's trade.
• Work with doughs from scratch, including preparing and managing sourdough, and producing laminated pastries such as croissants and danishes.
• Work as part of the bakery team, managing time to meet production schedules while maintaining quality, presentation and food safety standards.
