Job summary

Marrow & Co in Sydney is seeking an experienced Maitre D' to be the welcoming face and operational heartbeat of the restaurant. You will oversee the guest journey, coordinate reservations and seating, and lead the front-of-house team to deliver warm, personalised service.

Key responsibilities include managing reservations, briefing the team, building relationships with regular guests and VIPs, and coordinating service flow with the kitchen to ensure seamless experiences.

Qualifications

• Previous experience as a Maitre D', Restaurant Supervisor, Assistant Restaurant Manager, or similar leadership role.
• Experience within premium dining, fine dining, or upscale hospitality environments.
• Exceptional guest engagement and relationship-building skills.
• Strong knowledge of restaurant operations and service standards.
• Confidence leading, coaching and motivating a front-of-house team.
• Excellent communication and interpersonal skills.
• A polished and professional presentation.
• The ability to remain calm and organised in a fast-paced environment.
• Confidence managing reservations, guest flow and peak service periods.
• RSA certification (or willingness to obtain).
• Flexibility to work evenings, weekends and public holidays.
• Full Australian working rights.

Responsibilities

• Deliver premium guest experience reflecting the Marrow & Co brand.
• Lead front-of-house welcome and manage reservations, bookings and seating plans.
• Lead pre-service briefings to ensure the team is prepared, informed and aligned for each service.
• Build strong relationships with regular guests and VIP members.
• Coordinate service flow between the kitchen and front-of-house teams.
• Drive guest satisfaction by proactively managing service standards, feedback and opportunities to elevate the experience.
• Manage guest enquiries, feedback and special requests with professionalism and care.
• Support the Restaurant Manager with daily floor operations.
• Coaching and developing front-of-house team members through hands-on support and feedback.
• Leading by example and maintaining premium service standards throughout every service.
• Upholding high standards of presentation, cleanliness and attention to detail.
• Demonstrating our values through teamwork, initiative and a genuine passion for hospitality.
