Job summary

Mokoko Bakery in Nedlands, Perth, WA, seeks an experienced Head Baker & Pastry Chef to lead production, shape menu direction and develop systems for daily operations.

You will mentor the production team, drive quality, consistency and presentation, and collaborate on product development as Mokoko expands to a second location. Immediate start preferred; role suits a hands-on leader with pastry and bread expertise.

Qualifications

• Qualified Pastry Chef or Baker with a minimum of 2 years' professional pastry experience.
• Demonstrated experience producing high-quality viennoiserie or bread is essential.
• Knowledge of naturally leavened bread production, including focaccia, ciabatta, and sourdough.
• A passion for product development, quality improvement, and menu innovation.
• A genuine desire to mentor, coach, and develop others.
• Australian citizenship or permanent residency.

• Manage production , stock control and food safety standards
• Develop and maintain kitchen systems, documentation, recipes, and operating procedures.
