Hamilton Island Enterprises on Hamilton Island, QLD, is seeking an experienced Junior Sous Chef for Pool Terrace, located in Reef View Hotel. The role supports a high-volume operation delivering buffet breakfast, à la carte lunch and dinner, plus in-room dining services.

You will work with senior kitchen leadership to oversee prep and service, guide junior chefs, and ensure food quality, timing and presentation across multiple service styles.

Qualifications

• Strong organisation, communication and leadership skills with the ability to remain calm under pressure.
• Experience in high-volume hotel or restaurant operations is essential.
• Ability to guide, train and motivate junior staff.
• Stock control, ordering, food costs and kitchen operations basics.

Responsabilités

• Oversee daily preparation and service across Pool Terrace's varied operation, working with the senior kitchen leadership.
• Support chefs in Pans, Pass, Larder and Room Service to maintain quality, timing and presentation during busy periods.
• Guide and mentor junior chefs, coordinate kitchen sections and ensure stock control and day-to-day organisation.
