SkyCity Adelaide is seeking an experienced Junior Sous Chef - Pastry to lead day-to-day pastry production for Conference and Events, supporting pastry needs across the property. This hands-on role has you running production, and stepping up to lead the pastry kitchen when senior chefs are unavailable.
You’ll deliver large-scale pastry outputs for banquets, functions and gala events, including plated desserts, cakes, tarts and buffets.
SkyCity is now looking for an experienced Junior Sous Chef - Pastry to join our Conference and Events kitchen team!
Lead day to day pastry production for Conference and Events while supporting pastry needs across the property. This hands on role has you running production, working alongside the team, and stepping up to lead the pastry kitchen when senior chefs are unavailable - ideal for an experienced Pastry Chef de Partie or Senior Pastry Chef de Partie ready to grow.
You’ll deliver large scale pastry output for banquets, functions and gala events, often serving several hundred guests. This includes creating plated desserts, individual items, cakes, tarts, slices, petit fours and buffet displays. You’ll interpret event orders to build accurate production plans, manage recipe scaling, batch production and portion control, and maintain shelf life, yield and wastage through effective storage, rotation and distribution.
The role also includes allocating tasks, conducting quality checks before service, and coaching junior chefs on technique and presentation.
You’ll bring a recognised qualification in patisserie, baking or commercial cookery, backed by solid pastry experience at Pastry CDP, Senior Pastry CDP or Junior Sous level. You thrive in high volume production, delivering consistent quality across large batches and crafting polished plated desserts for events. Your technical range spans chocolate tempering, choux, shortcrust, puff and laminated pastry, mousses, creams, custards, gels, set and frozen desserts, cake assembly and decoration, plus foundational bread or Viennoiserie. You’re confident producing gluten free, dairy free and vegan items, experienced in guiding junior chefs, and strong on food safety, allergen control and hygiene. Flexibility for early mornings, evenings, weekends and public holidays is essential to support event operations.
