Job summary

The Fraternity Club in Fairy Meadow is seeking an experienced Head Functions Chef to lead our functions team and elevate high-quality events. You will supervise cooks, manage rosters, stock and menu planning to meet demand for events ranging from 20 to 500 guests.

Role requires Food Safety Supervisor Qualification, strong leadership, and a focus on HACCP/WHS compliance, with excellent presentation and communication. Weekend and night work are required, with flexibility for the right candidate.

Qualifications

• Food Safety Supervisor Qualification mandatory.
• Proven leadership in a fast-paced kitchen environment.
• Strong stock control, ordering, and menu planning knowledge.
• Experience with HACCP & WHS regulations.
• Excellent personal presentation and communication.

Responsibilities

• Prepare high-quality dishes for functions and events.
• Oversee kitchen operations and supervise cooks, apprentices and kitchen hands.
• Manage rosters to meet business demand.
• Order and organise stock as required.
• Maintain freshness and quality of ingredients for high standards.
• Assist in seasonal function menu planning.
• Ensure quality and consistency across products.
• Inspect and maintain cleanliness and safety of work areas.
• Monitor and comply with WHS regulations and HACCP procedures.
• Opportunities to work in other club kitchens to expand skills.
