Job summary

Hemingway’s Brewery in Cairns is seeking a Head Brewer to lead a small brewing team on a 35 HL four-vessel DME system, producing core range and Inner Sanctum limiteds.

You will own QA/QC, inventory, planning, packaging quality and cellar standards, and oversee the distribution of beer to venues and regional accounts. Relocation assistance is available for the right candidate.

Qualifications

• Head Brewer/Senior Brewer experience in a commercial brewery.
• IBD GCB Diploma or higher preferred.

• Run production grain-to-glass on a 35 HL 4-vessel DME system into 70 HL FVs.
• Protect core range consistency and build seasonal/limited program.
• Own QA/QC, inventory, planning, packaging quality and cellar standards.
• Lead and mentor a small brew team.
• Oversee distribution of beer to venues and wholesale accounts.

Head Brewer | Hemingway’s Brewery | Cairns QLD

Own a 35 HL four vessel brew deck, a 70 HL cellar, and the beer that supplies four waterfront venues (1,400+ seats) plus regional wholesale. Award winning independent brewery. Tropical lifestyle. Competitive package. Relocation assistance for the right candidate.

We are an FNQ owned brewery and hospitality group brewing on the Cairns Wharf in heritage Shed 2 Trinity Inlet, and pouring through Port Douglas, Cairns Wharf, Trinity Beach Tap House and Sails on the Esplanade.

You will lead a small brewing team producing our medal winning core range and Inner Sanctum limiteds, keg and pack, and oversee the logistics/distribution of our beer and the group’s centralised wine and spirit program to our venues and regional accounts.

You will:

• Run production grain-to-glass on a 35 HL 4-vessel DME system into 70 HL FVs

• Protect core range consistency and build the seasonal/limited program

• Own QA/QC, inventory, planning, packaging quality and cellar standards

• Lead and mentor a small brew team

• Oversee distribution of beer and group liquor to venues and wholesale accounts

You need:

• Head Brewer / Senior Brewer experience in a commercial brewery

• IBD GCB minimum (Diploma+ highly regarded)

• Strength in yeast, water, sensory, packaging and team leadership

• Comfort with the physical job and with a logistics component

• Rights to work in Australia
