This is a hands-on brewing role with genuine leadership responsibility. You’ll work across brewing, cellaring, filtration and packaging while helping lead shifts, train the team and maintain our standards for product quality, food safety and operational performance.

Senior Brewer
Brisbane | Full time | On site
About the company

BrewDog Australia brings together our Brisbane brewery, hospitality venues, and national retail and wholesale customers.

Backed by Tilray Brands, we combine the energy and agility of a local team with the capabilities of an international beverage business. Alongside our core BrewDog beers, we’re developing a broader portfolio that includes alcohol-free products, RTDs, customer brands and new beverage innovation.

We’re continuing to grow what our Brisbane brewery can produce while keeping great liquid, strong brewing standards and continuous improvement at the centre of everything we do.

About the role

As Senior Brewer, you will:

  • Perform brewing, cellaring, filtration, packaging and other production activities in line with our production schedule and quality standards.
  • Help deliver the weekly production plan safely, efficiently and consistently.
  • Act as shift lead, setting priorities, coordinating the team and ensuring tasks and handovers are completed properly.
  • Monitor beer quality and sensory performance throughout the brewing process.
  • Complete final pre-packaging assessments and sign-offs when the Head Brewer is unavailable.
  • Operate and take day-to-day ownership of brewing equipment and associated production systems, including our reverse-osmosis dealcoholisation plant.
  • Train and support brewery team members, ensuring people understand and follow the relevant procedures.
  • Maintain accurate brewing, production and quality records to support traceability and compliance.
  • Support recipe development, brewery trials and new-product development.
  • Help maintain our HACCP, GFSI, GMP and food-safety programmes.
  • Identify practical opportunities to improve product quality, consistency, efficiency and brewery performance.
  • Support packaging operations, including keg filling and canning runs.
  • Maintain outstanding standards of housekeeping, hygiene and workplace safety.
About the candidate

You’re an experienced commercial brewer who takes pride in producing consistently great beer.

You’re comfortable taking responsibility for a shift, making sound decisions and helping other people perform at their best. You lead through your actions, remain calm when production plans change and are always looking for ways to improve the product or process.

You’ll bring:

  • At least 18 months’ experience working in a commercial brewery.
  • Practical experience operating brewing, cellar and packaging equipment.
  • Strong knowledge of brewing processes, fermentation, filtration, yeast management, cleaning and sanitation.
  • Experience maintaining brewing records and production documentation.
  • An understanding of brewery quality systems, HACCP, GMP and food-safety requirements.
  • Strong organisational skills and the ability to manage competing production priorities.
  • High attention to detail and a disciplined approach to quality and record keeping.
  • The confidence to lead shifts, coach colleagues and positively influence the team.
  • A practical, hands-on approach to problem-solving and continuous improvement.
  • The right to work in Australia.

An IBD brewing qualification, brewing or food-science qualification, HACCP certification, forklift licence or current Australian driver’s licence would be well regarded.

You’ll need to be comfortable working in a physically demanding production environment and working flexibly when brewery operations require occasional early starts, late finishes or weekend support.

Why join BrewDog Australia?

This is an opportunity to take on meaningful leadership responsibility while remaining closely involved in the brewing process.

You’ll work across a broad and developing beverage portfolio, contribute to new products and trials, and have a genuine voice in how we improve our beer, processes and brewery.

You’ll join a close-knit Brisbane team with the backing, technical knowledge and international reach of Tilray Brands.
