Job summary

Mantra Tonsley Adelaide is seeking an experienced Food & Beverage Manager who thrives in an active operations role. You will lead restaurant, bar and events, coaching the team on the floor and owning commercial disciplines behind a successful venue.

Reporting to the General Manager, you will be visible during service, manage rosters, costs and stock, and drive guest experiences while coordinating with kitchen and hotel leadership.

Qualifications

• 3–5+ years' experience in F&B management or a comparable senior hospitality leadership role.
• Strong restaurant and bar operational experience.
• Demonstrated ability to lead, train and motivate a diverse team.
• Experience managing rosters, labour costs and productivity.
• Strong understanding of COGS, stock control and beverage margins.
• Experience with functions, conferences or event catering.
• Good wine, beverage and bar knowledge.
• RSA certification is current.
• Sound understanding of food safety and hospitality compliance requirements.
• Experience using hospitality management systems (POS, rostering) and general IT skills.

Responsibilities

• Lead restaurant, bar and event operations.
• Hands-on during service and set the standard for the team.
• Train and coach team members on the floor.
• Drive consistently high service standards and guest experiences.
• Manage rosters, labour productivity and wage costs.
• Monitor revenue, COGS, beverage margins and other KPIs.
• Manage stock control, ordering, inventory and supplier relationships.
• Develop and maintain a commercially effective wine/beverage offering.
• Coordinate conferences, functions and event catering.
• Work with Head Chef to ensure kitchen/front-of-house coordination.
• Support promotions and initiatives to grow F&B business.
• Maintain SOPs, food safety, RSA and compliance standards.
• Recruit, onboard, train and develop the F&B team.
• Collaborate with General Manager and hotel leadership team.
