Job summary

Greca, The Apollo Restaurant Group's lively Greek taverna in Brisbane, is seeking a hands-on Sous Chef to lead prep and service alongside the Head Chef.

You’ll coach junior chefs, maintain food quality, and uphold safety and cleanliness while keeping pace during busy service. This role offers training and growth across The Apollo Restaurant Group, within a team that values guests, teamwork and Kaizen, Be Original, and Own It Together.

Qualifications

• Experience as a Sous Chef in a busy restaurant setting.
• Ability to coach and develop junior chefs and kitchen hands.
• Calm, clear leadership during high-pressure service.
• Strong organisation and team‑first attitude.

Responsibilities

• Support the Head Chef with daily kitchen operations and service.
• Run sections and lead the pass when needed.
• Coach and develop junior chefs and kitchen hands.
• Maintain food quality, portioning and presentation.
• Ensure food safety, cleanliness and kitchen standards.
• Assist with ordering, stock control, prep planning and waste reduction.
• Support smooth openings, closings and handovers.
