Job summary

The Apollo Restaurant Group in Sydney is seeking a Head Chef to lead a busy kitchen and own the culinary direction across our Sydney operations.

You will manage daily kitchen operations, train and mentor the brigade, and collaborate with restaurant management to ensure exceptional quality, consistency, and commercial performance in a high-volume environment.

You will foster safety standards, budgeting, and menu innovation to drive guest satisfaction.

Qualifications

• Head Chef or Senior Sous Chef in quality, high-volume restaurants.
• Proven leadership and people-management capabilities.
• Strong understanding of menu development and cost control.

Responsibilities

• Lead daily kitchen operations and service quality.
• Coach and develop the brigade with clear feedback.
• Contribute to menu development focusing on flavour and seasonality.
• Oversee food and labour costs, rostering and stock control.
• Collaborate with restaurant management and senior kitchen team.
• Maintain food safety standards and an organised kitchen.
