Job summary

The Henry Jones Art Hotel in Hobart is seeking a Restaurant Manager to lead Landscape Restaurant & Grill, delivering an award-winning fine dining experience with a focus on exceptional service and wine excellence.

You will guide a dedicated team, shape service style and the wine program, and collaborate across departments to achieve guest satisfaction and profitability. WSET 3 or equivalent is highly desirable, with availability across 7 days.

Qualifications

• Demonstrated leadership in premium hospitality environments.
• Well-versed in fine-dining protocols and service expectations.
• Able to think strategically while managing daily operations.
• Experience with budgeting, labour, and cost of goods sold.
• WSET Level 3 or equivalent wine knowledge is highly desirable.
• Available to work across 7 days, including weekends and public holidays.

Responsibilities

• Lead the daily operations of Landscape Restaurant & Grill to deliver an exceptional fine dining experience.
• Develop and maintain strong relationships with key stakeholders in hospitality and wine.
• Manage and curate a classical beverage list with high quality and consistency.
• Collaborate with the Sommelier and Group Wine Manager to evolve the wine cellar and meet targets.
• Coach and mentor the team to drive service excellence and continuous improvement.
• Oversee front-of-house standards, training, and guest engagement to maximise sales.
• Manage budgets, KPIs, and financial reporting to achieve profitability targets.
• Recruitment, rostering, and performance management to optimise labour and costs.
