Merivale in Paddington, a family-owned hospitality group, seeks a talented Sous Chef for Fred's. You will lead a small brigade, run a section during service, and mentor junior chefs while maintaining the high standards Merivale is known for.

With 5+ years in high-end restaurants, you thrive in an open kitchen, enjoy guest interaction, and are passionate about seasonality and superb ingredients sourced locally. This role offers ongoing development within a dynamic portfolio.

Formación

• Have at least 5 years’ experience in a high-end restaurant or wine bar, with experience at Sous Chef level or ready to step up.
• Be confident cooking proteins, running a section and leading a service.
• Have strong knowledge of produce, seasonality and high-end cooking techniques.
• Be confident leading and mentoring a small team of chefs.
• Be organised, calm under pressure and able to maintain high standards throughout service.
• Be comfortable working in an open kitchen and engaging with guests.

Responsabilidades

• Lead day-to-day running of the kitchen and a small brigade during service.
• Support the Head Chef and maintain high standards Fred's is known for.
• Mentor and develop junior chefs and foster teamwork.
• Ensure hands-on, seasonal cooking using locally sourced produce.
• Interact with guests in the open kitchen and deliver exceptional hospitality.
