Job summary

Novotel Perth Murray Street in the heart of Perth is seeking an Executive Chef to lead Miss Mi and the wider kitchen operation across conferencing, events and hotel dining. You’ll own culinary direction and performance with a bold Pan-Asian offering.

You’ll inspire Heartists, drive quality and profitability, manage food safety and menu engineering, and partner with hotel leadership to evolve the guest experience. Sponsorship may be available for the right candidate.

Qualifications

• Proven experience as an Executive Chef in high-volume hospitality.
• Genuine Pan-Asian culinary expertise essential.
• Strong financial acumen with P&L, food cost and labour margins.
• Strong knowledge of food safety, HACCP, WHS.
• People-first leadership, building high-performing teams.
• Commercial Cookery qualifications or equivalent credentials.

Responsibilities

• Own and evolve culinary direction of Miss Mi, delivering bold Pan-Asian offerings.
• Lead, inspire and develop our kitchen Heartists to create a high-performing culture.
• Drive quality, consistency and creativity across restaurant, conferencing, events and hotel dining.
• Own the numbers – food cost, labour, purchasing, margins, menu engineering and profitability.
• Develop menus balancing creativity, authenticity, seasonality and commercial performance.
• Maintain food safety, HACCP and WHS standards.
• Partner with the Director of Food & Beverage and hotel leadership to evolve the guest experience and F&B strategy.
