Job summary

Novotel Perth Murray Street, part of the Accor Group, is seeking an experienced Head Chef to lead our Miss Mi kitchen, driving quality and a guest-focused food experience in a high-volume setting. Reporting to the Director of Food & Beverage, you will own the kitchen and set the standard across all food production.

You will mentor a diverse brigade, deliver contemporary Asian-inspired cuisine, and manage food cost while upholding brand standards in a vibrant Perth hotel environment.

Qualifications

• Proven experience as a Head Chef or Senior Sous Chef in a high-volume hotel or restaurant environment.
• Strong experience in modern Asian cuisine with ability to deliver contemporary menus.
• Demonstrated financial acumen, including managing food cost, margins, and kitchen performance.
• Good understanding of food safety, compliance, and WHS requirements.
• Genuine passion for developing and leading high-performing teams.

Responsibilities

• Oversee all kitchen operations, driving quality and consistency for a contemporary guest-focused food experience.
• Lead from the front, mentoring and developing a diverse kitchen brigade.
• Deliver modern, contemporary Asian-inspired cuisine across outlets and events.
• Manage food cost, stock control and supplier relationships while maintaining brand standards.

Job Description

Reporting to our Director of Food & Beverage, this is a key leadership role responsible for overseeing all kitchen operations, driving quality and consistency, and delivering a contemporary, guest-focused food experience.

You Will Take Full Ownership Of The Kitchen, Leading From The Front And Setting The Standard Across All Areas Of Food Production. Your Focus Will Include

• Leading, mentoring, and developing a diverse kitchen brigade


• Driving consistency, quality, and presentation across all outlets and events


• Delivering a modern, contemporary Asian-inspired culinary offering


• Managing food cost, stock control, and supplier relationships


• Ensuring compliance with food safety, hygiene, and brand standards


• Collaborating with the leadership team on menus, activations, and guest experience


• Supporting the delivery of conferences, events, and high-volume service periods

Qualifications

We are looking for a commercially minded culinary leader who brings both creativity and discipline:

• Proven experience as a Head Chef or Senior Sous Chef in a high-volume hotel or restaurant environment


• Strong experience in modern Asian cuisine, with the ability to deliver contemporary, relevant menus


• Demonstrated financial acumen, including managing food cost, margins, and overall kitchen performance


• A strong understanding of food safety, compliance, and WHS requirements


• A genuine passion for developing and leading high-performing teams


• A calm, solutions-focused approach in a fast-paced environment
