Crown Resorts is preparing to launch Mott 32 Melbourne in 2027. We are seeking an Executive Chef to establish and lead the culinary direction of this landmark venue, ensuring authentic, innovative, and exceptional dining experiences at scale.

Qualifications

• Proven experience as an Executive Chef or senior culinary leader in luxury restaurants, internationally recognised hospitality brands or premium hotel environments.
• Extensive expertise in Chinese or Cantonese fine dining, with authentic techniques and premium ingredients.
• Demonstrated success leading large and diverse culinary teams in high-profile dining operations.
• Strong commercial acumen with experience managing budgets, labour costs and operational performance.
• Track record of delivering exceptional guest experiences through culinary excellence and innovation.
• Outstanding leadership, communication and stakeholder management skills.
• Experience in pre-opening restaurant projects will be highly regarded.
• A genuine passion for mentorship, team development and creating unforgettable dining experiences.

The Role

Opening at Crown Melbourne in 2027, Mott 32 Melbourne will bring globally celebrated Chinese cuisine, exceptional craftsmanship and award‑winning hospitality to Australia's most prestigious integrated resort destination.

As Executive Chef, you will be responsible for establishing and leading the culinary direction of this landmark venue, ensuring every dish reflects the authenticity, innovation and excellence that have made Mott 32 an internationally recognised brand.

Working closely with the General Manager, Crown's culinary leadership team and Mott 32's global stakeholders, you will play a pivotal role in the pre‑opening, launch and long‑term success of the business.

This role demands an exceptional culinary leader with deep expertise in premium Chinese cuisine, strong commercial acumen and the ability to inspire high‑performing teams to deliver world‑class dining experiences at scale.
