Job summary

Crown Resorts Limited is seeking a Bar/Beverage Manager to spearhead the pre-opening and ongoing operation of the Mott 32 bar program in a luxury dining environment. You will craft innovative beverage offerings and drive quality, cost control and guest satisfaction across all shift periods.

You will recruit, train and coach a high-performing team, collaborate with the General Manager and Executive Chef, and ensure compliance with liquor licenses and safety standards.

Qualifications

• Experience as Bar Manager or Beverage Manager.
• Luxury restaurant or premium hotel background.
• Strong knowledge of cocktails, spirits, wine.
• Experience with ordering, inventory and beverage costing.
• Proven leadership and team development skills.

In this role you will:

• Lead the successful pre-opening, launch and ongoing operation of the Mott 32 bar program.
• Develop and deliver an innovative cocktail, spirits and non-alcoholic beverage offering aligned to the Mott 32 brand.
• Drive beverage quality, consistency and presentation standards across all service periods.
• Manage beverage purchasing, inventory control, stocktakes and relationships to optimise profitability and minimise wastage.
• Stay ahead of industry trends and evolving guest preferences to ensure the beverage program remains relevant, innovative and market-leading.
• Recruit, train, coach and develop a high-performing team of bartenders and beverage professionals.
• Collaborate closely with the General Manager and Executive Chef to create seamless food and beverage experiences.
• Maintain compliance with liquor licensing, food safety and responsible service requirements while upholding the highest operational standards.

About You:

• You are an accomplished hospitality professional with a passion for luxury service, premium beverages and creating memorable guest experiences.
• You combine strong commercial acumen with creativity, leadership and a deep understanding of modern beverage trends.
• Proven success in a Bar Manager, Beverage Manager, or similar leadership role.
• Experience within luxury restaurants, fine dining venues, premium hotels or internationally recognised hospitality brands.
• Strong knowledge of cocktails, spirits, wine and contemporary beverage trends.
• Demonstrated experience managing ordering, inventory control, stock management and beverage cost performance.
• Exceptional leadership and team development skills, with the ability to build a positive and high-performing culture.
• Strong commercial awareness with a proven ability to drive revenue and optimise profitability.
• Excellent stakeholder management and guest engagement skills.
• Experience within pre-opening hospitality projects will be highly regarded.
