The Country Club Hotel, proudly owned by The Comiskey Group, opens in early 2027 in Moreton Bay as a high-volume, family-friendly venue. We are building a kitchen from the ground up and seek an experienced Executive Chef to lead from day one.

You will own the culinary operation, recruit and mentor the opening team, set kitchen systems and menus, and ensure exceptional food quality at scale while maintaining cost controls and safety standards.

Qualifikationen

• Proven track record as Exec Chef or senior culinary leader.
• Experience in pubs, clubs, hotels, or large-volume venues.
• Strong leadership and people-management skills.
• Ability to control food costs and optimize wastage.
• Experience with opening/launch phases is a plus.

Aufgaben

• Lead, mentor and develop a large kitchen brigade.
• Recruit and onboard opening culinary team.
• Establish kitchen systems, procedures and operating standards.
• Oversee menu development, implementation and food quality.
• Deliver consistent, high-quality food through high-volume service.
• Manage food costs, stock control, wastage and supplier relationships.
• Manage labour, rosters and kitchen productivity.
• Maintain strong food safety and compliance standards.
• Work closely with venue management to achieve commercial targets.
• Build a positive, accountable and high-performing kitchen culture.
