Amora Hotel Brisbane is seeking an experienced Executive Chef to lead our kitchen team and shape the hotel’s culinary direction. You will oversee operations across all dining outlets, events and in-room dining, delivering exceptional five-star hospitality.

Qualifications

• Previous experience as an Executive Chef or Head Chef in a hotel or multi-outlet venue.
• Creative and commercial approach to menu development.
• Proven ability to lead and develop a kitchen team.
• Strong knowledge of food costs, labour, inventory and compliance.
• Commitment to quality, consistency and memorable guest experiences.

• Develop seasonal menus focused on modern Australian cuisine and quality, sustainable ingredients.
• Lead, mentor and develop the kitchen team.
• Oversee daily operations and maintain an efficient kitchen.
• Ensure consistently high standards of taste, presentation and food safety.
• Manage food costs, labour, inventory and wastage.
• Work collaboratively with hotel departments.
• Oversee and maintain the hotel’s HACCP food safety program.
• Contribute to hotel and group food and beverage initiatives.

Amora Hotel Brisbane is a refurbished five-star hotel located in the heart of Brisbane’s CBD. With 296 rooms, 11 conference and event spaces and multiple food and beverage outlets, the hotel offers a diverse and fast-paced culinary operation.

Amora Hotels is in an exciting period of growth, with plans to double its portfolio across the Australian market. This role offers the opportunity to join an established hotel group as it continues to grow and strengthen its presence in Australia.

About the role

We are seeking an experienced and creative Executive Chef to lead our kitchen team, shape the hotel’s culinary direction and build the reputation of our food and beverage offering.

You will oversee kitchen operations across dapl restaurant, breakfast, bar, in-room dining, café service, conferences and events.

About you
