Responsibilities

• Manage beverage program financials: costings, labour, inventory; Loaded software a plus.

Director of Beverage & Service Excellence

We are a group of three premier restaurants and a destination pub, dedicated to the art of hospitality. We are currently seeking an exceptional individual to join our leadership team as our Director of Beverage & Service Excellence.

This is not a traditional management role; it is a position for a visionary who understands that service is a performance and that a drink is an experience. If you possess a rare combination of technical mastery, creative flair, and the ability to inspire a team, we want to hear from you.

The Role

You will be the architect of our guest experience across all four venues. Your mission is to elevate our floor service to the highest level of sophistication and transform our bar program into a stage for liquid art.

Your Responsibilities

Service Mastery: Train and mentor floor staff in high-end, intuitive service using our Sequence of Service & Standard Operating Procedures. You will set the standard for elegance, timing, rapport and guest engagement, maintaining a training schedule and retraining all staff as and when required.

Venue Management: Responsible for all FOH staff, with Venue/Restaurant Managers reporting daily to you.

Cultural Leadership: Foster a high-energy, professional environment. You have an innate ability to connect with people, a passion for hard work, and the charisma to lead by example.

Theatrical Mixology: Lead our bar teams in creating cocktails that are as visually stunning as they are delicious. From the science of smoke and ice to innovative presentation, you will push the boundaries of creativity while perfecting the classics. Every glass must be a theatrical experience.

Wine Expertise: Act as our resident authority on wine. You will curate knowledge, train staff on varietals and regions, and mentor them in the art of the pour and the psychology of the sale & naturally create a wine list to be revered.

Operational & Financial Leadership: Manage the financial health of our beverage program. You will be responsible for costings, labour efficiency, and inventory management, ensuring that excellence is balanced with profitability. Experience with Loaded software will be an advantage.

Senior Management Team: You will be part of the Senior Head Office Management Team and report directly to the owner.
