Job summary

Redcliffe Leagues Club (Dolphins) is seeking a Commis Chef to join our kitchen team. With multiple outlets and catering for events, you will contribute to food preparation, plating and menu input.

You will support the Executive Chef and Deputy Chefs, maintain high standards of hygiene, and participate in catering functions. A Certificate IV in commercial cookery and proven club kitchen experience are essential.

Qualifications

• Proven experience in operation of a professional kitchen in a Club environment.
• Extensive knowledge of general and specialised food preparation techniques and procedures.
• Sound knowledge of stock management procedures.

Responsibilities

• Contribute to the kitchen operations, including food preparation, presentation and occasional menu input
• Assist the Executive Chef, Head Chef and Chef de Partie with all culinary requirements, while fostering a positive and collaborative work environment
• Maintain consistent food standards and cleaning/hygiene routines
• Mise en place, cooking and plating for catering functions
• Assist the wider catering team in maintaining catering techniques and procedures, food safety regulations and workplace health and safety

With a range of food outlets, including Koopa Cafe, On The Green, Bistro forty20, 8 function rooms, Dolphins NRL catering and a 10,000-seat KAYO Stadium, supported by over 50,000 Dolphin members, this is an opportunity to be part of a dynamic and thriving environment.

About you

• Proven experience in the operation of a professional kitchen operation in a Club environment
• Certificate IV in commercial cookery
• Proven experience as a qualified Cook or Chef
• Extensive knowledge of general and specialised food preparation techniques and procedures
• Sound knowledge of the latest cooking trends and techniques
• Sound knowledge of stock management procedures
