Job summary

ibis Styles Brisbane Elizabeth Street is seeking a passionate and reliable Full-time Commis Chef to join our energetic kitchen team. The role involves preparing and presenting high-quality dishes across breakfast buffet, à la carte lunch and dinner and conference catering.

You will support daily operations, maintain a clean, hygienic workspace, and adhere to stock control, food safety standards and stock rotation. Flexible to work weekends and public holidays in a rotating roster.

Qualifications

• Certificate in Commercial Cookery or equivalent experience.
• Experience in a similar role, preferably within a hotel environment.
• Detail-focused with ability to deliver consistently high-quality food under pressure.
• Energetic and proactive with enthusiasm to develop culinary expertise.
• A team player who easily builds rapport with colleagues and guests alike.
• Time management skills with the ability to multitask.
• Good interpersonal skills with ability to communicate with all levels of team members.
• Flexible availability to work a rotating roster, including weekends and public holidays.

Responsibilities

• Preparing and presenting high-quality dishes across breakfast buffet, à la carte lunch and dinner and conference catering.
• Support daily operations and take initiative when working independently.
• Maintaining a clean and hygienic work environment and upholding food safety standards.
• Following stock rotation procedures, minimising wastage and assisting with stock control.
• Equipment care and reporting issues to the Executive Chef.

• The role involves preparing and presenting high-quality dishes across breakfast buffet, à la carte lunch and dinner and conference catering.
• You will support daily operations and take initiative when working independently.
• Responsibilities include maintaining a clean and hygienic work environment, ensuring mise en place is ready, and upholding food safety standards in line with current regulations.
• You’ll be expected to follow strict stock rotation procedures, minimise wastage, and assist with stock control.
• Equipment care and cleanliness are essential, with any issues reported to the Executive Chef.

Qualifications

The ideal candidate will hold a Certificate in Commercial Cookery or equivalent experience, and show strong teamwork, flexibility, and a commitment to delivering memorable guest experiences aligned with the ibis Styles brand.
