Job summary

Taronga Western Plains Zoo Dubbo is seeking an experienced Casual Chef to support Taronga’s Café Wild, Café Waterhole and function areas with high-quality food service. Reporting to the Executive & Head Chef, you will cook to Taronga menus, manage food prep and hygiene, and contribute to cost planning and kitchen operations in a collaborative hospitality team.

Qualifications

• Commercial Cookery - Certificate III is required.
• RSA certification or ability to obtain certification is required.

Responsibilities

• Prepare and cook food as per Taronga menus.
• Plan menus and determine food costs in consultation with stakeholders.
• Execute orders of food, kitchen supplies and equipment.
• Demonstrate techniques to apprentices and advise on cooking procedures.
• Maintain and enforce hygiene regulations.
• Comply with Taronga’s Customer Service Charter and suggest improvements.

• TCSA Restaurant Employees Award, Chef Level 1-3, Mon to Fri hourly rate from$40.80 (includes hourly base rate $31.39 + 11% superannuation + weekend penalty rates where applicable)

Taronga Western Plains Zoo Dubbo is looking for an experienced and motivated Casual Chef to join the team!

Reporting into the Executive & Head Chef, you’ll work alongside a well-oiled, passionate hospitality team, having the ability to soak up knowledge from our experienced chefs!

About the Role…

The role of casual chef is to contribute to the day to day operational activities working in Taronga’s Café Wild, Café Waterhole, Savannah function center, Zoofari Lodge and the new Serengeti kitchen, supported by Taronga’s passionate kitchen leaders.

You will provide a high standard of food in regards to preparation, cooking and presentation whilst ensuring best practice food and kitchen hygiene practices are met.

• Prepare and cook food as per Taronga menus
• Plan menus and determine food and labour costs in consultation with stakeholders
• Execute orders of food, kitchen supplies and equipment
• Demonstrate techniques to apprentices and advise on cooking procedures
• Maintain and enforce hygiene regulations
• Comply with Taronga’s Customer Service Charter and suggest initiatives for further improvement to ensure industry leading standards are maintained.
• Comply with and suggest sustainability practices in the workplace to help achieve Taronga’s sustainability targets and reduce environmental impact.
• Comply with and report any Work, Health and Safety incidents in line with Taronga’s Work, Health and Safety Charter.

About You…

We are looking for candidates that have:

• Commercial Cookery - Certificate III
• Responsible Service of Alcohol (RSA) certification or the potential to obtain certification.
