Job summary

Lancemore Milawa is seeking a Chef de Partie to join the 40-room boutique property in King Valley, at the base of the Alpine National Park. You will contribute to a high-quality dining experience at Merlot Restaurant, managing a designated kitchen section and working closely with Head and Sous Chefs.

Ideal candidates will have a relevant qualification or equivalent experience, a minimum of 2 years in a professional kitchen, and strong food safety and teamwork skills.

Qualifications

• Minimum 2 years' experience in a professional kitchen within a restaurant, hotel or similar environment.
• Chef de Partie or similar role experience is preferred.
• Ability to independently manage a kitchen section.
• Strong cooking, preparation and presentation skills.

Responsibilities

• Prepare and cook menu items to high standards.
• Manage a designated kitchen section during service.
• Complete mise en place and ensure readiness for service.
• Monitor quality, portioning and consistency of dishes.
• Assist with menu development and stock management.
• Coordinate with front-of-house staff during service.
• Guide junior kitchen staff and ensure food safety standards.
