Job summary

Lancemore Milawa, located at the base of the Alpine National Park in King Valley, invites a Chef de Partie to join Merlot Restaurant. You will prepare high-quality dishes, manage a kitchen section, and ensure smooth mise en place for service in a busy regional hotel kitchen.

The role requires a relevant qualification or equivalent experience, with at least 2 years in a professional kitchen. A flexible roster including evenings, weekends, and public holidays is expected.

Qualifications

• Relevant commercial cookery qualification or equivalent industry experience.
• Minimum of 2 years in a professional restaurant, hotel, or comparable kitchen.
• Experience as Chef de Partie or similar role with ability to manage a section.

Responsibilities

• Prepare and cook menu items to consistently high standards.
• Take responsibility for the effective operation of a designated kitchen section.
• Complete mise en place and ensure the section is fully prepared for service.
• Monitor quality, presentation, portioning and consistency of dishes.
• Assist with menu development, stock control, and inventory management.
• Work with front-of-house staff during service and support junior kitchen staff.
• Maintain food safety, hygiene and workplace health & safety standards.
