Grill Americano Sydney, part of Lucas Collective, seeks top chefs to lead in our premium Italian-inspired steakhouse. You will oversee kitchen operations, foster staff development, and ensure exceptional food safety and service during peak periods.

Ideal candidates have strong leadership, excellent communication, and a proven ability to manage high-pressure services, with flexibility to work weekends and holidays. Immediate start available for the right candidate.

About the Opportunity:

We are looking for the industry’s best chefs to join our team in Sydney.

The Ideal Candidate Must Have:

• Chef experience in a premium a‑la‑carte restaurant
• Experience with Italian cuisine is advantageous
• Management candidates must have solid understanding of management practices and financial budgets/targets
• Exemplary leadership with focus on staff development
• Demonstrated experience in leading a high‑performing team
• Highly adaptable and able to perform in high‑pressure service periods
• Solid understanding of food safety standards
• Proven ability in building effective relationships
• Organisational and time management skills
• Experience using Deputy (or similar Time & Attendance system), H&L, and proficiency in Microsoft Office suite
• Excellent communication and presentation
• Able and willing to work weekends, public holidays, opening and closing shifts
• Qualification in Commercial Cookery or equivalent
