Job summary

Fin and Scales Restaurant, located within Tilligerry RSL Sports Club in Tanilba Bay, NSW, seeks a dedicated working chef to join a vibrant hospitality team. The role emphasizes fresh seafood, premium meats, and creative menu execution in a welcoming club setting.

Ideal candidates have at least 1 year of kitchen experience, strong HACCP/WH&S knowledge, and the ability to thrive under pressure while maintaining quality and teamwork. Full-time, onsite, with staff meals and club benefits.

Qualifications

• Minimum 1-year proven experience as working chef in a commercial kitchen, ideally within a restaurant or club environment.
• Sound knowledge of food preparation techniques, portion control, and menu presentation.
• Strong understanding of WHS and Food Safety Standards (HACCP).

Responsibilities

• Create new recipes, design seasonal menus, and introduce daily specials that align with the restaurant's concept.
• Track ingredient stock levels, minimize food waste, and place timely orders with food vendors.
• Cook, season, and plate high-quality dishes according to established restaurant recipes and standards.
• Inspect every dish at the pass to ensure correct flavour, temperature, portion size, and visual presentation.
• Enforce strict hygiene standards, proper food storage temperatures, and deep-cleaning schedules to meet health department regulations.
• Train line cooks, assign daily prep duties, manage work schedules, and maintain kitchen team morale.
• Communicate seamlessly with front-of-house staff regarding customer food allergies, special requests, and out-of-stock items.
• Monitor portion sizes and kitchen waste to keep food costs aligned with the restaurant’s budget targets.

• Strong understanding of Work Health & Safety (WHS) and Food Safety Standards (HACCP).
• Ability to work under pressure while maintaining quality and attention to detail.
• Excellent teamwork, time management, and communication skills.
• Flexibility to work a rotating roster including weekends, evenings, and public holidays.
