Job summary

Chalky’s in Brookvale is seeking a hands-on hospitality leader to run day-to-day operations, own rostering, ordering and COGS, and collaborate with our Executive Chef on menu execution. You’ll guide the team on busy nights and set the standard from the floor.

You’ll build and coach a motivated crew, shape events and sport nights with leadership and marketing, and work with owners who are on site to back you. This role suits a proven venue leader ready to grow with our group.

Qualifications

• Experience running a hospitality team, venue, bar or similar setting.
• Able to lead from the front and uphold high standards while developing the team.
• Creative, people-focused leadership with hands-on management style.

Tucked down a hidden laneway in Brookvale, Chalky’s is the Northern Beaches’ adult playground.

Six premium pool tables, the biggest sports screen on the Beaches, two private karaoke rooms, a dart-lined beer garden, and a 100-person art deco private bar for birthdays and big celebrations. The kitchen is run by our Michelin-star-trained Executive Chef, and we trade until 1am on weekends while the rest of the area winds down at 11.

We opened in May 2025 and we’re now profitable. The next chapter is turning Chalky’s from a disruptive new upstart into the place the Beaches goes for a great night out.

We’re the same team behind Bucketty’s Brewing Co. just down the road. We’re small, heavily invested, and we look after each other across both venues.

The role

You’ll run Chalky’s day to day and have real input on where it goes next. The numbers matter and you’ll own them, but we also want you to bring ideas, try things, and make the venue better.

• Own rostering, ordering, and COGS for the venue
• Work with our Executive Chef on menu execution and food cost
• Lead from the floor on busy nights and set the standard for the team
• Build, coach, and keep a team that wants to stay
• Help shape events, sport nights, and functions with our leadership and marketing teams
• Report to our Head of Operations, working alongside the Bucketty’s Venue Manager and with direct access to the owners

The hours.

We’re open 7 days, closing around 10pm midweek and 1am Friday and Saturday. We know late nights burn people out, so we’re building the roster around our managers, not the other way round. You’ll work alongside a dedicated Bar Manager, share the late closes, and get [two consecutive nights off each week and 1 weekend off a month.

About you

You’ve run a hospitality team before, whether as a venue, bar, or assistant manager

You lead from the front and hold standards, and you do it in a way that builds people up

You’re generous, creative, and happy to roll up your sleeves
