• How to cut, bone, trim and prepare meat properly — hands-on, step by step, at your own pace
• Everything from everyday cuts to specialty product, so you build real, well-rounded skill
• How to talk to customers with confidence, and share what you know
• The everyday standards of working in fresh food — hygiene, food safety, and taking pride in a well-run counter

You won't be thrown in the deep end. You'll be shown, supported, and given the time to actually get good at this.
