Job summary

Dorsett Gold Coast is seeking a Breakfast Chef to lead the kitchen operations across the Executive Lounge and Jin Cafe & Bar, ensuring every dish meets the highest standards of quality and presentation.

You will mentor the kitchen team, drive menu development, manage stock and costs, and uphold HACCP and safety standards in a fast-paced hotel environment, delivering memorable dining experiences for guests.

Qualifications

• Relevant qualifications in Commercial Cookery or equivalent experience.
• Senior culinary experience in a hotel/restaurant/hospitality environment.
• Proven leadership abilities to coach and support a kitchen team.
• Sound knowledge of food safety, HACCP and safe handling.

Responsibilities

• Lead day-to-day kitchen operations across the Executive Lounge and Jin Bar.
• Maintain exceptional standards of food quality, presentation and consistency.
• Drive menu development, seasonal offerings and continuous improvement.
• Oversee stock control, ordering, food costs and waste management.
• Ensure compliance with food safety, HACCP and workplace health and safety standards.
• Foster a positive, collaborative and high performing kitchen culture.
• Work closely with hotel leaders to deliver exceptional guest experiences.
