Reporting to the Restaurant Manager, you will manage bar standards, supplier relations, menu development, and regulatory compliance in a busy 38-hour week, Brisbane-based role.

Qualifications

• Diploma or higher qualification in hospitality.
• Demonstrated experience managing bar and beverage operations at a managerial level in a high-volume venue.
• Supplier and procurement management, stock and GP margin management.
• Current RSA in Queensland.
• Advanced wine, spirits and cocktail knowledge.

Responsibilities

• Oversee day-to-day beverage and bar operations.
• Lead and coach bar team alongside venue management.
• Develop beverage menus, promotions and seasonal offers.
• Ensure regulatory compliance, RSA, licensing and safety standards.

Position Title: Beverage Operations Manager Location: 5 Boundary Street, Brisbane QLD 4000 Salary: $80,000 + 12% Superannuation Company: HSW Group Operations HSW GRAZIER NO 5 TRUST About Us Ciao Papi (Howard Smith Wharves) is seeking an experienced Beverage Operations Manager for an immediate start.

This is a full-time ongoing position, working 38 hours per week, based in Brisbane, Queensland. Role Overview The Beverage Operations Manager will be responsible for leading the venue’s day-to-day beverage and bar operations, driving service quality, profitability, stock control, team capability, product development, guest experience, and regulatory compliance.

You will report directly to the Restaurant Manager. Key Duties Working alongside the Restaurant Manager, Bar Supervisors, and venue team, your duties will include:

• Oversee efficient, consistent, and compliant day-to-day bar operations.
• Partner with the Restaurant Manager and Bar Supervisors to maintain service standards.
• Improve procedures, workflow, speed of service, and bar performance.
• Ensure the bar is staffed, stocked, and ready for service demands.
• Audit cleanliness, presentation, equipment, safety, and service readiness.
• Drive profitability through stock, cost, labour, budget, and forecast controls.
• Monitor beverage costs, variances, wastage, ullage, shrinkage, and reporting.
• Maintain accurate inventory, ordering, cellar, and stock-loss controls.
• Develop beverage menus, seasonal offers, and promotions aligned with the venue brand.
• Track beverage trends and identify commercial opportunities.
• Train, mentor, and coach Bar Supervisors and bar team members.
• Support recruitment, onboarding, retention, succession, and team accountability.
• Uphold beverage quality, presentation, service, and guest experience standards.
• Manage escalated guest feedback and service recovery.
• Ensure RSA, licensing, safety, and policy compliance, including risk reporting and corrective action.

Qualifications and Experience To be considered for this position, you should possess the following qualifications and work experience:

• Diploma or higher qualification in hospitality or similar
• Demonstrated experience managing bar and beverage operations at a managerial level within a high-volume venue
• Demonstrated supplier and procurement management, stock and inventory control and GP margin management
• Current Responsible Service of Alcohol (Queensland)
• Advanced wine, spirits and cocktail product knowledge
