Job summary

a'Mare Sydney, a premier luxury Italian dining venue, is seeking an energetic Assistant Head Sommelier to lead our wine program and elevate guest dining experiences.

You will oversee wine inventory, collaborate with the Beverage Director, and curate a standout wine list in partnership with our chefs, delivering exceptional pairing suggestions and staff training to ensure outstanding service.

Qualifications

• Must have Australian working rights.
• Current NSW RSA certificate.
• Expertise in wine and food pairing, focusing on Italian, French, and Australian wines.
• Strong understanding of cost of goods sold (COGS).
• Fluent spoken English; hospitality qualifications are welcome.

Responsibilities

• Manage and maintain wine inventory with precision and care.
• Collaborate with Beverage Director on sales mix and wine education.
• Curate and update the wine list with chefs.
• Oversee wine service to ensure the highest standards.
• Train, mentor, and inspire Sommeliers and Wine Waiters.
• Organise and host wine dinners and events.
• Assist guests in finding the perfect wine pairing.
