Maestro Hospitality's Italian dining precinct at Crown Sydney is seeking an experienced Assistant Head Sommelier to support our wine program across Vista'Mare and the surrounding venues, curating an exceptional Italian wine collection and guiding the team.

The ideal candidate has 3+ years in a fine dining setting, extensive knowledge of Italian, French and Australian wines, strong food‑and‑wine pairing skills, and proven ability to manage wine inventory and costs.

Qualifications

• 3+ years in a premium restaurant or fine dining environment.
• Extensive knowledge of Italian, French and Australian wines.
• Strong understanding of food and wine pairing.
• Experience managing wine inventory and cost of goods sold.

Responsibilities

• Deliver exceptional wine service across the precinct.
• Collaborate on wine list development, sales mix and beverage strategy.
• Manage wine inventory, ordering and stock control.
• Train, mentor and develop Sommeliers and Wine Waiters.
• Lead regular wine education sessions for front-of-house teams.
• Assist with wine dinners, tastings and events.
• Build relationships with wineries and suppliers.
• Guide guests through thoughtful food and wine pairings.

Are you ready to take the next step in your sommelier career? Join Maestro Hospitality's acclaimed Italian dining precinct at Crown Sydney, where exceptional food, world-class wines and genuine hospitality come together.

Our Barangaroo precinct is home to three distinctive venues:

• Vista'Mare – our waterfront aperitivo bar offering premium wines, cocktails and spectacular harbour views.

We are seeking an experienced and passionate Assistant Head Sommelier to support our wine program across the precinct. Working closely with the Beverage Director and leadership team, you will help curate one of Sydney's most exciting Italian wine collections while mentoring the next generation of sommeliers.

What We're Looking For

• Full Australian working rights
• Current NSW RSA Certificate
• Minimum 3 years' experience in a premium restaurant or fine dining environment
• Extensive knowledge of Italian, French and Australian wines
• Strong understanding of food and wine pairing
• Experience managing wine inventory and COGS
• Excellent spoken English and communication skills
• A genuine passion for hospitality, education and guest experience

Your Key Responsibilities

• Deliver exceptional wine service across the precinct
• Collaborate with the Beverage Director on wine list development, sales mix and beverage strategy
• Manage wine inventory, ordering and stock control
• Monitor beverage costs and inventory performance
• Train, mentor and develop Sommeliers and Wine Waiters
• Lead regular wine education sessions for front-of-house teams
• Assist with wine dinners, tastings and special events
• Build relationships with wineries and suppliers
• Guide guests through thoughtful food and wine pairings to create memorable dining experiences

Highly regarded:

• Previous experience with Italian cuisine and Italian wine regions
