Job summary

De Bortoli Wines is seeking a Trainee Winemaker to join our Winemaking team. You will gain hands-on exposure to laboratory and cellar operations while supporting product development, trials and research projects.

Reporting to the Senior Winemaker, you will develop skills across laboratory analysis, blend preparation, wine evaluation and QA procedures, building a foundation for a long-term career in winemaking.

Qualifications

• Passion for wine and winemaking career development.
• Willingness to learn and work hands-on across lab and cellar operations.
• Strong attention to detail and commitment to safety procedures.
• Good communication and teamwork in a winery setting.

Responsibilities

• Develop practical skills across key laboratory and cellar processes.
• Collect samples, prepare laboratory samples and conduct analysis as directed.
• Assist with blend preparation, bench trials and wine tastings.
• Prepare fining trials involving tannin, acid, oak and other inputs.
• Document and report on trial and R&D outcomes.
• Assist with wine evaluation and tastings with teams.
• Maintain accurate winemaking records and information.
• Prepare, label, pack and despatch wine show and product samples.
