Responsibilities

• Break down whole carcasses and portion retail cuts with minimal waste.
• Prepare crumbed, marinated, and cured meats.
• Craft smallgoods including sausages and smoked products.
• Operate and maintain mincers, grinders, tenderisers, sausage fillers.
• Manage smoking chambers and curing vats.
• Advise customers on meat selection and cooking techniques.
• Maintain attractive, hygienic product displays.
