Job summary

Mygration Pty Ltd in Brisbane's Darra bakehouse seeks a strategic yet hands-on Head of Bakery Operations (Artisan Production Manager) to lead end-to-end production in a 7-day operation, balancing wholesale and retail demand with traditional sourdough and laminated pastry processes.

You will mentor craft teams, drive quality, safety, and cost performance, partner with leadership to scale recipes from concept to production, and maintain the handcrafted standards that define the brand.

Qualifications

• 5+ years of senior bakery leadership experience.
• Deep knowledge of fermentation and lamination.
• Experience with 7-day rostering and cost control.
• Strong knowledge of HACCP, GMP, BRC and FSANZ.

Responsibilities

• Lead end-to-end production for a 7-day bakehouse.
• Mentor and oversee baking and pastry teams.
• Plan production schedules balancing wholesale and retail demand.
• Drive QA and food safety compliance and process improvements.
• Manage budgets, labour costs, and wastage.
