Job description

11 Pine Drive, Bermagui, NSW, 2546, AUSTRALIA

Honorbread is a growing bakery in the heart of Bermagui on the Far South Coast of NSW, known for crafting high-quality artisan bread, pastries and food. We’re looking for an experienced, hands‑on Head of Bakery Production who loves baking, leads by example and brings out the best in their team.

About the Role

You’ll lead daily bread, pastry and savoury production, making sure our wholesale customers, cafés, markets and special orders receive the right products, on time and to our high standards. Working closely with the General Manager and owners, you’ll balance hands‑on baking with production planning, team development, staff hours, stock and safety.

Just as important as your baking skills is how you work with people. We’re looking for someone who communicates openly, listens to others and builds a calm, respectful team where everyone takes responsibility for their work.

What You’ll Do
  • Lead daily production and maintain consistent standards for taste, appearance and shelf life.
  • Plan quantities, schedules and workflows to meet changing orders while reducing shortages, overproduction and waste.
  • Lead, coach and develop bakers, pastry and food staff, apprentices and support staff; make shift priorities and responsibilities clear.
  • Prepare rosters, manage staff hours within budget, assist with recruitment and induction, and address performance or attendance issues fairly.
  • Monitor stock, ingredient usage, batch yields and production costs, and communicate ingredient and packaging requirements.
  • Maintain recipes and production records in Tema, share methods through written and video instructions, and use Tanda for rostering and staff hours.
  • Maintain food safety, hygiene, allergen controls, cleaning schedules and records for inspections and audits.
  • Promote safe work practices, address hazards promptly and coordinate equipment repairs, servicing and maintenance.
  • Work openly with owners, the General Manager and retail and wholesale teams to resolve problems and improve production.
What We’re Looking For
  • Proven experience in bakery, pastry or a similar food-production environment, with strong hands‑on skills in artisan bread and/or pastry.
  • Experience leading, rostering or training a production team, with a supportive approach and clear expectations.
  • Strong production planning, organisation and time management skills, including the ability to adapt to changing demand and staff availability.
  • A commitment to consistent quality, food safety, cleanliness, allergen management and workplace safety.
  • An understanding of staff hours, stock, waste and production costs, and how to use resources efficiently.
  • Clear, respectful communication and the confidence to have honest conversations, including expressing disagreement constructively.
  • A calm, practical approach to solving problems and a willingness to take responsibility for results.
  • Confidence using, or willingness to learn, production, stock, ordering, rostering and reporting systems.
  • A commitment to Honorbread’s values of quality, care, respect, responsibility and community.

Experience as a senior or head baker in an artisan bakery would be highly regarded, along with formal training in baking, pastry, cookery, food safety or management. Experience improving recipes, production systems or cost controls, and coordinating equipment maintenance, would also be an advantage.
