Job summary

Koko Black in Melbourne is seeking a hands-on Kitchen Team Leader to coordinate our pastry and prep kitchen, ensuring ingredients and components are prepared safely, efficiently and to approved quality standards.

This role reports to the Afternoon Shift Manager and involves guiding a high-performing team, maintaining product quality, safety, and continuous improvement, and contributing to our Australian artisan chocolate brand.

Qualifications

• Proven leadership or supervisory experience in a commercial kitchen or FMCG environment.
• Hands-on leadership style that inspires and develops the team.
• Strong knowledge of food preparation, pastry production, food safety, hygiene, and allergen management.
• Excellent communication and collaborative approach.

Responsibilities

• Prepare ingredients and components according to recipes and specs.
• Coordinate workflow and allocate team members to meet daily production plan.
• Monitor product quality, presentation and yield throughout prep.
• Ensure proper handling, storage, labeling and rotation of ingredients and finished products.
• Follow cleaning, hygiene, food safety and SOPs; address hazards and escalate when needed.
• Complete and record production, temperature, allergen and quality checks; raise non-conformances.
• Provide direction, coaching and feedback to team members.
• Support onboarding, training and skill development.
• Collaborate with Shift Manager, QA, Maintenance, Supply Chain and Warehouse to address issues.
