Zusammenfassung

Loulou, at Lavender Bay, part of Etymon Projects, is seeking an experienced Baker with strong pastry production background. The 2:00 am start supports morning trade, then shifts to pastry team mise en place and daily production tasks under the Head of Pastry.

Applicants should have 3+ years in baking/pastry, including viennoiserie, and be able to follow recipes with precision. This full-time role offers growth within a premium hospitality group.

Qualifikationen

• Minimum 3 years' experience within the baking, pastry or patisserie industry.
• Minimum 1 full year of experience working with viennoiserie or laminated pastry.
• Strong general pastry knowledge and confidence following recipes accurately.
• Experience preparing products such as tarts, ganaches, creams, fillings and other pastry components.
• Good understanding of baking, dough handling and basic lamination.
• Bread-making experience is helpful but not essential.

Aufgaben

• The role focuses on early-morning pastry production and preparation for morning trade.
• Complete the pastry team's production and mise en place for the day.
• Prepare and bake tarts, ganaches, creams, fillings and other pastry components.
• Scale recipes and complete general production tasks.
• Work independently while following direction from the Head of Pastry.
• Maintain high standards of quality, presentation and cleanliness throughout the shift.
