Job summary

Kerzner International Management FZE is seeking a Deputy Sushi Master at One&Only The Palm to assist the Sushi Master in nigiri prep and counter service, ensuring strict adherence to L’Abysse standards.

The role requires a culinary diploma or 3+ years’ experience, with 5-star hotel background and fluent English. HACCP knowledge and strong leadership will help you contribute to a dynamic, premium dining team in Dubai.

Qualifications

• Culinary school diploma or equivalent.
• Minimum 3 years’ experience in a similar role.
• Fluent in English and able to communicate with the team.
• Knowledge of HACCP and food safety standards.

Responsibilities

• Take part in preparation, cutting and mise en place of nigiri per L’Abysse standards.
• Ensure consistency, precision and excellence in taste.
• Lead sushi counter service during service times.
• Assist Sushi Master and replace when required.
• Train and mentor junior staff and interns where needed.
• Maintain impeccable personal and team presentation.
