Kerzner International Limited in Dubai seeks an experienced Sushi Nigiri Chef to lead the nigiri station and contribute to menu development. You will prepare, cut, and plate with precision, ensuring authentic flavors and impeccable presentation.

The role requires training and supervising junior staff, maintaining HACCP standards, and collaborating with the restaurant team to deliver exceptional guest experiences within a luxury hotel setting.

Qualifications

• Must have culinary school diploma or equivalent.
• Minimum 3 years of professional kitchen experience.
• Experience in 5-star hotel environments.
• Knowledge of HACCP food safety systems.
• Fluent in English.

Responsibilities

• Prepare, cut, and mise en place nigiri according to L Abysse standards.
• Guarantee consistency, precision, and excellence in taste.
• Lead sushi counter service during service times.
• Be able to replace Sushi Chef when required.
• Train and supervise commis or interns in the sushi team.
• Ensure hygiene and food safety compliance (HACCP).
• Check deliveries for quality and quantity.
• Maintain team spirit in a demanding environment.
