Job summary

Conrad Dubai is seeking a Stewarding Supervisor to lead the cleanliness and stewarding operations, ensuring immaculate equipment and spaces for every shift.

You will coordinate with Culinary and F&B teams, supervise cleaning and sanitising, manage stock and equipment maintenance, and coach a dependable stewarding team while upholding Hilton HACCP standards.

Responsibilities

• Oversee cleaning, storage, and distribution of china, glassware, silverware, and stewarding equipment.
• Supervise cleaning and sanitising across kitchens and back-of-house areas per HACCP and local health rules.
• Ensure dishwashing machines and stewarding equipment are maintained and reported for repairs.
• Monitor stock, breakages, and supply usage to control costs without sacrificing quality.
• Assign daily duties, train and coach team members, and recognise good performance.
• Promote safe working practices and respond to hygiene or safety concerns.

Responsibilities

Here’s what you’ll do during a typical day as a Stewarding Supervisor at Conrad Dubai:

• Prepare for exceptional service: Coordinate with Culinary and Food & Beverage teams to ensure every kitchen and dining outlet has the clean, polished equipment it needs, when it needs it.
• Care for every detail: Oversee the cleaning, storage, and distribution of china, glassware, silverware, and stewarding equipment, protecting their quality and appearance.
• Maintain impeccable standards: Supervise cleaning and sanitising across kitchens and back-of-house areas, ensuring the team follows Hilton HACCP procedures and local health requirements.
• Keep equipment service-ready: Check that dishwashing machines and other stewarding equipment are used correctly, maintained, and reported promptly when repairs are needed.
• Manage resources responsibly: Monitor stock, breakages, and supply usage, helping control costs without compromising quality.
• Lead with care: Assign daily duties, train and coach team members, and recognise great work to build a confident, dependable team.
• Protect guest and team member well-being: Promote safe working practices and respond promptly to hygiene or safety concerns.
