Job summary

Wynn Al Marjan Island is seeking a Sous Chef Southeast Asian Cuisine to join the Culinary team. Oversee daily kitchen operations to ensure efficiency, consistency, and adherence to culinary standards. Lead and develop the kitchen staff to deliver high-quality dishes.

Develop weekly set menus, monthly promotions, and seasonal offerings in collaboration with the Executive Chef. Manage inventory, cost controls, and ensure HACCP compliance for a 5-star kitchen environment.

Qualifications

• Secondary school diploma or equivalent.
• Culinary qualification preferred.
• 8+ years in a 5-star kitchen; Southeast Asian cuisine and leadership.

Responsibilities

• Oversee daily operations of the kitchen to ensure efficiency, consistency and adherence to culinary standards.
• Monitor resource consumption and optimize equipment, ingredients, and inventory.
• Develop weekly menus, monthly promotions and seasonal offerings with Executive Chef.
• Lead, coach and support the kitchen team to maintain high performance and teamwork.
• Ensure dishes are prepared and presented according to recipes, quality and presentation guidelines.
• Maintain cleanliness and hygiene of kitchen equipment and utensils in compliance with HACCP.
