Job summary

Emirates Flight Catering in Dubai is seeking a seasoned Bakery Production Lead to oversee kitchen operations, ensure SOPs, and coordinate with stakeholders. You will drive production targets for airline catering and maintain high quality across all baking processes.

The role requires at least six years in culinary leadership, experience in menu development, food costing, and managing large teams in a multi-national hotel or aviation kitchen.

Qualifications

• Minimum 6 years of culinary experience.
• Experience in high-volume airline catering or large kitchen teams.
• Proven ability to implement kitchen SOPs and quality standards.

Responsibilities

• Lead kitchen production operations to meet targets and deadlines.
• Optimize planning by aligning manpower, equipment, and capacity.
• Ensure SOPs, recipes, food safety and regulatory standards.
• Establish quality control and portion/labelling standards.
• Monitor performance and implement corrective actions.
• Drive lean improvements and cost optimization.
• Develop Sous Chefs and production teams.
• Coordinate with Executive Sous Chef and stakeholders.
• Conduct quality assurance reviews and process verification.
