Job summary

Daikan Hospitality Group is seeking a Pit Master to oversee grilled food standards across our outlets in Dubai and Abu Dhabi. You will master robata, open-fire, charcoal grilling, and Josper ovens, delivering consistent quality and developing standout grill specials.

You will train kitchen teams, monitor yields and waste, and ensure strict food safety compliance. This roaming role requires a driving licence and own car for travel.

Qualifications

• Culinary diploma or equivalent professional qualification is an advantage.
• Minimum 6 years of kitchen experience, including 3 years as a Grill Chef, Robata Specialist, or Pit Master.
• Mastery of robata, open-fire, charcoal grilling, and Josper ovens is mandatory. Yakitori, binchotan, smoking, butchery, and meat and seafood handling experience are strong advantages.
• Valid Dubai Municipality or ADAFSA food safety certificate, with good knowledge of live-fire safety and food hygiene.
• Valid UAE driving licence and own car are mandatory. Must be physically fit, able to train staff, communicate in English, and work flexible shifts across Dubai and Abu Dhabi.

• Train grill teams, assess staff skills, support peak service periods, and travel between branches according to schedule.
