Qualifications

• Previous UAE or GCC experience is preferred.
• Culinary qualifications would be an advantage.
• Comfortable working in fast-paced and high-volume kitchen environments.
• Strong knowledge of food safety, hygiene, HACCP and correct food storage.
• Good teamwork, discipline and attention to detail.
• Available to work evenings, late nights, weekends and public holidays.

Responsibilities

• Take responsibility for an assigned section and ensure smooth preparation and service.
• Guide junior chefs while maintaining quality, consistency and hygiene standards.
• Prepare sushi rice, maki, nigiri, sashimi and related Japanese dishes.
• Maintain excellent knife skills, raw-fish handling and temperature-control standards.
• The level offered will depend on experience and technical ability.
• Prepare meats, seafood and vegetables using Robata, charcoal or other live-fire techniques.
• Maintain accurate cooking temperatures, timing, seasoning and presentation.
• Support the Chef de Partie in managing daily section preparation and service.
• Maintain food quality, stock levels, portion control and workstation organization.
• Follow approved recipes, portioning, presentation and food-safety standards.
